Last Meal 2011
It’s the last meal of 2011! Tonight, we had filet mignon with sautéed mushrooms, and pasta with shrimp and Alfredo sauce. Served with a glass of Cabernet Sauvignon. LOL!

Tonight’s Dinner
Tonight’s dinner was a beef roll made with ground round, stuffed with feta, zucchini, and mushrooms topped with a blue cheese and feta sauce, served with zucchini and fingerling potatoes. Yes, I am all about rolling thing in meat lately. LOL!
Dinner Success!
I got ambitious tonight and made Chicken Cordon Bleu with a honey mustard sauce, steamed zucchini noodles, a the last of our own homegrown tomatoes on the side with cucumber all the way from Japan. I hit it out of the ball park tonight!
Since the chicken breasts I get are so large, Lin and I usually split one at dinner. I’d planned to use one large one tonight, but after getting the first one rolled up, it looked so good, I made two … which I’m glad I did, because it was good, and we’d have wanted more than two medallions each. Added bonus is that the four crusty ends are left! If they survive the night, I’ll send them along with Lin tomorrow for a snack. Or maybe I’ll be selfish and keep them for myself. LOL!
Fresh Bread
I have been lax lately with the bred baking, which … since we don’t buy bread … has meant not having bread. Today I fixed that situation with this fluffy loaf of white bread.
