Steak and Potatoes

A couple weeks ago, we splurged on a huge ribeye steak. It’s been sitting in the freezer waiting for me to work up the bravery to cook it. Last night, I finally did, and it was oh so very good! It was also oh so very large. Really, really large. LOL!

Decided that as tasty as the chili from the prior night was, I really, really wanted chicken, so hickey it was! Oven fried and breaded chicken, steamed veggies, and oven fries with cumin and lots of pepper. Yum!

Tonight’s Dinner

Tonight’s dinner was a beef roll made with ground round, stuffed with feta, zucchini, and mushrooms topped with a blue cheese and feta sauce, served with zucchini and fingerling potatoes. Yes, I am all about rolling thing in meat lately. LOL!

I got ambitious tonight and made Chicken Cordon Bleu with a honey mustard sauce, steamed zucchini noodles, a the last of our own homegrown tomatoes on the side with cucumber all the way from Japan. I hit it out of the ball park tonight!

Since the chicken breasts I get are so large, Lin and I usually split one at dinner. I’d planned to use one large one tonight, but after getting the first one rolled up, it looked so good, I made two … which I’m glad I did, because it was good, and we’d have wanted more than two medallions each. Added bonus is that the four crusty ends are left! If they survive the night, I’ll send them along with Lin tomorrow for a snack. Or maybe I’ll be selfish and keep them for myself. LOL!

Fresh Bread

I have been lax lately with the bred baking, which … since we don’t buy bread … has meant not having bread. Today I fixed that situation with this fluffy loaf of white bread.

Last Night’s Dinner

Last Night’s dinner was one of my favorites: chicken fried pork cutlets, steamed carrots, mashed potatoes, and of course, gravy! This meal is the best comfort food ever. Just wish it wasn’t so much work to make from scratch, though now that I’m doing the steaks in the oven, it’s not nearly as annoying as it was back when I actually fried them in grease on the stovetop.

Tonight’s dinner was flank steak medallions stuffed with spinach and feta cheese, zucchini noodles, and a nice fresh salad.

Considering my day included the truck leaving me stranded in a parking lot and my hubby having to rescue me, I’m amazed I didn’t just call for some kind of delivery meals. But I was really looking forward to this meal, so I made it. Totally worth the energy expended!
