When did I stop making casseroles? Why did I stop making casseroles? Two friends mentioned they were making chicken casserole today, and it occurred to me I have not made a single casserole of any sort in years. Weird, seeing as I used to make one a week at least. It probably has something to do with the fact we no longer eat canned tuna, and we only get chicken when we can get the free-range stuff, so not all that often anymore. It’s not so cheap.

But tonight, we are having a chicken and broccoli casserole with a simple side salad and sugar cookies for dessert!

And we’ll be eating it off our new plates too. Speaking of which, I have to show them to you. I am totally in love with them and am having no buyer’s remorse at all. They are totally fab!

Well … back to the kitchen. I want to get the whole casserole put together so all I have to do is put it in the oven at the appropriate time and wait. So easy!
