Awaiting Infection

I have finally taken the leap. I have decided attempt creating my own sourdough starter from scratch. In other words, there’s a jar of unbleached wheat flour and water sitting on my kitchen worktable awaiting a fungal infection of local yeasts. I don’t even know if there are any local yeasts. I guess I will find out soon enough.

I’ve always thought sourdough starters were really just too much trouble. A sourdough starter is like a pet. You can’t ignore it. It must be fed and cared for on a regular basis. I’ve killed every starter that anyone has ever given me, but that was all before I was actually baking bread regularly. Maybe all the dividing and feeding and tending won’t be so bothersome to me now. We shall see.

If nothing else, it will be an interesting little experiment that may or may not lead to some edible bread. Who knows, maybe it will lead to an official Casa de Orb sourdough starter that is uniquely mine. I’ll admit it … I’m a little excited to see what happens!
