Last night’s dinner was a tasty meatloaf, buttery mashed potatoes, and a salad featuring cottage cheese and … more veggies from the garden! Have I mentioned how happy I am with both the oven and the garden? Yeah, I am certain I have, but I’m just that happy about both those things. Really happy. :lol:
Don’t have enough meatloaf for a second meal all by itself, so I’m going to make some pasta with a light tomato sauce, chop up the leftover meatloaf, and toss it all together, served with more salad from our garden, and some garlic-parmesan toast. Mmmmm. Can’t wait for dinner!
