Not Quite Perfect

Something went wrong with the bread. Not horribly wrong. I am not left with two inedible bricks. It still thumps correctly, the crust is smooth and soft, and it smells fabulous, but I didn’t get the high crowns on the loaves like last two times. It was much slower to rise and then just didn’t really want to rise anymore. Not sure what happened, but maybe it’s the change in the weather. It’s cool and humid today. I noticed it took a lot less flour to get the dough to the right consistency, and during the second kneading, I had to be careful not to add any flour at all, because it was starting to feel very wrong. I’m wondering if perhaps the liquid might have been just a bit too cool. As you can see though, it still produced some lovely bread … just not as lovely as the last batch.

I was going to post the recipe today, but now I think I’ll wait until I use it one more time to see if this is a fluke or if I copied something wrong … or if I need to adjust things for the state of the weather, which I hear can actually cause issues with breadmaking.
Color me a bit disappointed these two didn’t two out as incredible as the last four, but … oh well, still haven’t made a brick, for which I am ever so thankful. ![]()
