Now I know what the dough should feel like, how much to knead it and the best place in my house to let it rise (in the oven -- I turn it on for just a minute to warm up the oven stone a bit). And the mixer works so much better for me than the food processor. Little more work for my wimpy arms, but the bread hooks do a wonder for working up the gluten. I think, by gosh, I have it!
